I guess this can go here. I'm in the process of making 20 gallons of elderberry wine. Part of the fun of winemaking comes in pretending you are really running a winery, designing labels for the wine, and so on, Here is the label I came up with/
Cheteau de poubelle blanche translates to "Castle of White Trash," and since this is being made in lemay, it's more than appropriate.
The word
pressing" on the bottom refers to the pressing: the first pressing will be #1, and the second pressing (where I reuse the skins from which the wine was pressed to make a second batch).
I am a complete incompetent when it comes to drawing by hand. Give a computer and MS Paint, and the results are adequate.

You will need an ale pail with a sealed, grommeted lid, and an airlock. I went the easy route and used dried elderberries. for 10 gallons, 2 pounds of dried elderberries, 1/2 gallon white grape juice, 9 1/2 gallons water, 19 pounds sugar, 3 TBS plus 1 tsp citric acid, 3 TBS plus 1 tsp yeast nutrient, 1/2 tsp sodium metabidulfite. Boil 2 gallons of the water. Add the dried elderberries, cover, and let cool.Stir everything else together except the yeast. Pour the cooled elderberry and water mix over the rest of the ingredients. Sprinkle the yeast on top, seal the ale pail and attach an airlock.
After a wekm using a sieve, strain off the wine from the berries. Put wine in a 5 gallon carboy, and attach an airlock. Siphon the wine off of the yeast deposits on the bottom once every 1-2 months, until the wine clears.

Yup, the very deep south. Lemay, in deep south St. Louis city. A land of Decade cigarettes, saloons on every corner, lottery tickets, and Bud light.
