10 Bean vegetable soup.
Ingredients (approx, I don't measure):
2-1/2 cups dried 10 bean mix
Holy trinity- carrots, onions, celery
Tomato, 1 or 2 whole tomatoes, chopped (I chopped a handful of cherry tomatoes.)
Mushrooms, option about 6 large, any variety, chopped
Jalapeno, 1 med-large, chopped
Rotel tomatoes, 1 can original.
Baby Spinach, 2 handfuls
16-20 oz. of vegetable broth
Water, 4-6 cups
Italian seasoning, thyme, rosemary, garlic powder (would have used 3 cloves minced, if I had had them.), cumin, salt & pepper.

Beans form a maiin staple of my diet. There is an old section of Vancouver BC called "Gassy Jack" [gassyjack.com] . I sprout my beans (I have a 3 bean mixture sprouting as we speak) just so I don't get that nickname. lol It's for a warm bean/noodle salad recipe. This looks good but may I make a few changes? Kale instead of spinach and a milder chili?

Sure, suggest away. I like spicy, so that's why the jalapeno and Rotel tomatoes. Each time I make a batch it's different. I use what I have or whatever I feel like. Kale would be good too.this is the first time I made 10 bean. Sprouts had it in their bulk section, so thought I'd try it.

Soak beans overnight in water. Drain and add veg stock, Rotel and water. I don't always but this time I sauteed all veggies except spinach. Then add all veggies to the beans. Spinach I drop in later. Bring to a full boil for 20 minutes. I remove about 2 cups and blend in blender. Then add back to soup.Turn down to simmer for as long as you like I simmered for a couple hours but if I'm in a hurry, 30-45 minutes will work. Spices were added to the veggies during sauteing. Then add S&P to taste.

You can add other veggies. I usually add whatever I happen to have around and make it up as I go along. This size pot lasts me 3-4 days. By day three I will add something to change it up a bit. Either spices, sauce or more veggies. Or you can freeze portions for later.
