I'm an avant garde vegan, what kinda unusual veg can one explore with when cooking? I'm a noob to eating kale crisps & it's now my go to leafy green. Any tips on incorporating a wider range of greens?

Raw Collards can be utilized as pasta. Just buy the large leaves, wash them in warm water, cut them into strips about the width of fettucini, removing the woody stems as you go, and then dress them liberally with your favorite pesto or vegan alfredo -- "Bitchin' Sauce" is really good. [bitchinsauce.com] (btw I've never used a tomato sauce on collards, I wouldn't recommend that, though a few scattered fresh tomato chunks are a nice addition to the pesto or alfredo.)

I'm more of a 'common or garden' vegan if you go to continental shops they sell stuff like mooli. I once got all worked up as somebody said they would make me veggie neeps on Burns night turned out to be a scots word for turnips - I quite like jerusalem artichokes and root ginger.
