Created a new dish:

Green peppers
Onions
Garlic
Chopped corn
Diced eggplant
Badia Cajun seasoning
Salt
Black pepper

Served over white rice

It tastes super great and super healthy.

What do you do? Saute everything together, then pour it over rice?

Pretty much... Add peppers, onions, garlic first... Caramelize, then add corn, caramelize more.. Then add eggplant and seasoning, and cook until eggplant is tender and breaks up..

@godlessinal great.. I used three green peppers and three onions.. One medium eggplant and one can corn if that helps🙂

Then make this and substitute the eggplant with four pounds of beef lol

That does look very good. I am trying to get away from meat. I have trouble digesting corn. I might substitute mushrooms.

what meat?

@LovinLarge You can't eat corn? Aw shucks.

@Mofo53 I would like to give up all meat. I am down by probably 50% so far. There are better ways to get protein.

Mushrooms would be a great substitute... I create a new vegan dish every month or so and I don't eat much meat either... Very small portions.. I like fish and chicken mostly...
