I can't seem to make pancakes anymore. Everytime I do, they hit the floor. They stick to the pan and I can't understand, why I can't make pancakes anymore.

If you make thin pancakes, you will always have problems with them. They always burn or tear. But making ordinary pancakes is easier. They are small and dense 👍

It's much easier to bake pancakes if your frying pan is well-greased with lard or butter. Plus, it will be easier for you to do it in a new frying pan. My pancakes were perfect when I baked them in a new frying pan. I don't always get to bake thin pancakes, but there are no problems with pancakes.
Many people bake pancakes without butter, in a completely dry frying pan. Of course, for this, the dough should contain 1 tablespoon of oil. Have you studied simple recipes or are you doing it intuitively? I think it will be easier for you if you make crepes thermomix. These pancakes have the simplest recipe.

The problem is your pan. Even "non'-stick"pans acquire residue on the surface over time. That residue is what is causing the sticking. You need a new pan. When using iron skillets, the use of detergents to clean them causes causes things like meat and pancakes to stick to the pan. .

You did not commit the cardinal sin of washing your pan with soap, did you ?
