There are about 10 items that I don't enjoy eating but would try it at a dinner party. There is only one item that I would never eat and that is snails. Even if you call it escargos.

So, you were obviously single at this A less than pleasant and small apartment is fine for a single person. Working a couple of jobs with very long hours over any shift you can get is fine if there is only yourself to worry about. Skipping some meals is fine for a healthy adult. Traveling from town to town to get whatever day job you can will be doable so long as your car holds up. Now try all of those things if you have two or thee kids. Or even one kid. Completely dependent person or people that needs to be in the same school at the same time every morning. And you need to be back at the same time every afternoon. Let's not even throw COVID complications with schools and day cares closed. You made it sound easy to avoid poverty. But having people dependent on you makes it exponentially harder.
