Artichokes, no way. But I do make my own mayonnaise. It tastes great and goes well with potatoes steamed in their jackets (skins) with a very liberal dash over them. Also, great on steak, chicken, ham and steamed fish as well.

Well this time I slow boiled it a good while and drained the water twice because of the excess salt in that cut of joint. But I cook it to the point where it is coming off the bone before I add the collards. Then I still slow cook it at least an hour.

They don't have plexi in the deli area and we communicate with the customers as to their meat/cheese choice etc. There is also close employee contact and sharing of equipment.
