This morning it was an organic Peruvian Chanchamayo - dark roast. I chose each bean individually, before hand grinding twice in my burr mill to ensure a consistent size. I boil my filtered water in a copper pot and carefully drizzle it over the grounds in my French press. I contain my eagerness for 3.75 minutes before I plunge the press to the bottom. The smell of coffee rising before me hints at the pleasures to come. I pour it slowly into my insulated mug, savoring the moment, at the same time thinking- damn! I wish I had a donut!
