The secret with Venison is to cover or mask, or cook out the "gamey" taste....so the Sour cream and garlic ingedients in Stroganoff should work. I recommend using lots of garlic; a bunch (12+) of cloves ground up. Also some fresh onion, and some oregano, or curry if you want an "Asian" stroganoff...but do spice it up. I don't recommend "hot" spices....but some here might.
