Thanks for the welcome! I'm normally interested in vegan/vegetarian dishes. Made this one for a special lunch today and thought you might like it. Zuchini Fritters with toppings: Shred or grate a pound or so of zucchini. Mix in a big bowl with a tsp of salt and let it stand for about 10 minutes, stirring occasionally. Meanwhile, mix one egg (or substitute) with a finely diced green onion (or two), chopped garlic and 1/4 tsp ground black pepper. After 10 minutes or so, drain the zucchini and wrap it into a clean kitchen towel. Roll it into a tube and squeeze it as dry as you can get it. Put it back into the big bowl and mix it with 3 Tbl flour, plus the egg mixture. Heat a large (and HEAVY) pan over med. heat. Swirl a Tbl mild oil over it (I like peanut oil). Drop the zucchini mixture into the pan, using about a heaping 1/4 cup, making 6 mounds. Flatten them a little (not too thin), cook until lightly browned (maybe 3 minutes), flip and brown the other side. While these are cooking......make a sauce. (Actually, I made 2....fill a good-sized blender bowl with fresh basil, 3 or 4 garlic cloves, a handful of pine nuts and a little sale. Blend with olive oil until it's the texture you like.) Second sauce....1/2 cup of sour cream (or vegan option), a TBL lemon juice and some grated lemon zest. By now, the fritters are ready. Serve.
