Tofu Salad Sandwiches
I made this for lunch and thought I would share. Yummy alternative to eggs. I drained the tofu by squeezing it in a towel before mixing it into the salad - makes it less runny. Chop the celery, garlic and shallot, then mix everything together. Serve on whole grain toast with lots of spinach. I had mine with a side of snap peas and baby carrots. This recipe makes enough for two good sized sandwiches.
Extra firm tofu 1/2 block
Hummus 1/4 cup
Mustard 2 tsps
Nutritional yeast 2 tsps
Garlic (minced) 1/2 clove
Turmeric 1/4 tsp
Celery stalk (chopped) 1/2
Shallot (minced) 1/2
Olive oil 2 tsps
Dried dill to taste
Bread (whole-grain or gluten-free) (toasted) 2 slices
Spinach 1 cup
Optional
Salt & pepper to taste
Dried parsley to taste
Cayenne pepper to taste
