After a long day, it was nice to come home to this (and a mini enchilada).

Oh good! I like a buffet type meal! A little bit of many things...

Looks absolutely delicious but what are we looking at and how?

Salad, mozzarella and tomatoes, hummus, pita bread and zucchini and sausage.

Dinner. With your eyes.
But seriously:
Top left is a classic salad caprese. Just tomato, fresh mozzarella, salt pepper, olive oil and fresh basil.
The beige shit is packaged roasted garlic hummus. It's accompanied by whole wheat pita and zucchini chips. Using zucchini as a substitute for pita lowers out carb intake a bit and it's really delicious.
Bottom right is just a baby spinach salad with cukes and tomato. We both use a low fat yogurt based salad dressing we can buy at the local grocery store. I should learn to make my own.
Bottom left is an apple chicken sausage with Vermont Maple Syrup I bought to try. Very sweet, but irresistible.
Also new to try and not shown here was a brand of frozen beef enchiladas. They were small and we each ate one. One enchilada had only one net carb... so good for Connie's diet. Not bad for mine either.

My main goal was to come home from afternoon errands and be able to prepare a dinner without a lot of prep time and cooking. I usually prefer making everything fresh.

@MrLizard It looks fit for royalty used to superb food and presentation. Thanks for the full menu. ?

@FrayedBear Why thank you... and it took me all of about 30 minutes to prepare!

You sound like Popeye.

@MrLizard I was thinking Betty Boop, but that works too!

Sounds like a Brooklyn accent to me!

Betty Boop was Popeye's girlfriend before Olive Oyl came along.

@AncientNight really?? I did not know that!

@FlippantLlama My Father told me that, because he saw them when they were only shown in movie theaters. There was no TV back in the 1920's and 30's.

@AncientNight Not sure Betty was actually Popeye's girlfriend. The Fleischer Brothers created both cartoon series. Popeye did first appear in a Betty Boop cartoon. She was there mostly as a way to introduce him as a cartoon character. He was already popular as a newspaper cartoon. He later got his own series.

By the way - Did you know Betty was originally a hybrid dog/human?

@MrLizard Well, they were together before Olive Oyl entered the picture. Maybe it was a series of one night stands! LOL

Lucky you!

Shit. Lucky me. I got to eat it, too!
AND spend time with my love!

@MrLizard just didn't give her time to explain it all!

@FrayedBear Yeah! It's difficult to type and kiss simultaneously.

@Petter kiss?

@FrayedBear yeah, we do that during dinner every night.

@FrayedBear As a Frenchman once stated, "Any guy who claims he can kiss a girl and drive a car at the same time is not giving the kiss the attention it deserves."

@Petter well said. You are in blazing good form today. ?
