Keto Chocolate Chip Cookies

I made this recipe yesterday and all I can say is holy chip! They're delicious. Found the recipe on Keto Connect's site. It says it makes 16 to 20 cookies but I got 22 cookies about the size of my palm. Mine came out a little crispier because I like them that way, but they still had a bit of a chewy texture.

You can watch the video from the link below. On that same video, they also made them using coconut flour. I'll try that next, but I think it's going to be hard to beat this recipe. When I do make that recipe, I'll let you know what I think.

Ingredients

1.5 cups almond flour
1/2 cup Lily's Chocolate Chips (can get on Amazon.com)
1/2 cup butter, melted
1 egg
1/2 cup erythritol
1 tbsp beef gelatin powder
1 tsp baking powder
1 tsp vanilla extract

Preheat your oven to 350 and line two baking sheets with parchment paper. (I didn't do this step -- lightly sprayed cookie sheets)

Combine the almond flour, beef gelatin, erythritol and baking powder in a small bowl and set aside.

In a bowl combine the melted butter, egg, and vanilla extract using a whisk. In two batches add the dry ingredients to the wet and combine until uniform.

Fold in the chocolate chips. Using a cookie scooper or spoon scoop out 16-20 cookies onto your baking sheets, depending on your cookie preference!

Bake the cookies at 350 for 15 minutes or until golden brown on the top. Allow to cool for at least 20 minutes prior to consuming! Enjoy!
