Recently watched a Jamie Oliver video that's fixed my omelets. Now, when I make scrambled eggs, it's because I meant to make scrambled eggs. His pointers that have helped me:

  • when you're scrambling in a bowl, all that belongs in the bowl are the eggs; don't add milk or salt & pepper.
  • put a pat of butter and a little bit of oil in the pan; none of that spray stuff
  • the eggs should spread out thinly, either because of a large cooking surface or because you've you've worked the eggs up the side of the pan.

The pic is how about 90% of my omelets turn out these days. The other 10% are slightly darker or sloppier because I've put too much stuff in them. No more scrambled eggs.

I NEVER add milk to my eggs.

I used to. Thought it was supposed to make them fluffier and apparently, it's common enough that Jamie had to say: stop.

@chalupacabre It got watery in my experience, because it separated.

Yum. Yes I've recently conquered omlettes myself.
