Anybody else like plantains? How do you cook them or what do you serve with them?
I like them with blackened or jerk chicken.
When cooking them, I slice them into planks, fry them in a little bit of butter and splash them with bourbon or liqueur just before taking them off the heat.
I am in San Juan, Puerto Rico this week and have experienced many new ways to eat plantains. My favorite so far has been when they are coarsely shredded (like hashbrowns) and deep fried into the shape of a nest. Then the main course meat is served nested in the fried plantains. Crispy deliciousness!
Add some nutmeg and cinnamon to the butter, you will not be sorry!
