Got the roasted vegetables done, boy those things are good even though the squash was not the best. Dug my potatoes today. My whole 3 plants which only got planted because a couple potatoes started sprouting in the kitchen this spring. One had only 2 little 1 inch potatoes. The other 2 plants had a few larger potatoes and a bunch of the tiny little things. The plants were massive and not dying down at all. I scrubbed all the tiny ones (some only 1/2" ) and roasted them as well. Most excellent.

Calorie count today was 1090. Weight was down 2 pounds from last Tuesday, some was likely "carry over" loss from previous week that was slow catching up. It's like that sometimes. 😟

Good to see a further loss. I love roast veg. You have reminded me to get in some squash - tasty and sweet and low calorie!

I only "discovered" roasted vegis about 2 years ago, it was on Pinterest. Tried butternut squash with garlic and later, tried other things. LOVE baby carrots and cauliflower, broccoli is good, Brussels sprouts not so much and avoid celery entirely.

Unfortunately this squash was not a great one, color and flavor are both below par. I think I may try a different recipe on it, also on Pinterest. Not as low calorie, it has molasses in it, kind of a sweet and sour flavor from the sound of it.
