4 June 2019 - Diet Diary - Need to turn in early tonight, tomorrow is appointment for eye, up in Kearney which is 90 miles away. Don't have to be there until after lunch but will do some shopping before the appointment. I'm not great at shopping after the appointment, eye hurts and allergies kick in. So, need to get rested as I don't have a driver this time so it will be a long day.

Water aerobics started tonight, two days a week for the next 2 months. Took a bit to get adjusted to the water but after getting used to it, it was nice. Plus, saved me having to take a shower in the morning, washed my hair while showering after the session. Save a little more time in the morning. Think I will just carry a couple of those pumpkin oatmeal "cupcakes" that I stuck in the freezer to have with my coffee on the road. Going alone, I will eat light as I don't typically eat out, I just pick up something at the store for the trip home.

Made a novel "pancake" for breakfast. Wanted a pancake but had a quite ripe banana that I told myself I really needed to eat. I was also very tempted to have scrambled eggs with asparagus. Put all the thoughts together and ended up trying a recipe from Pinterest, a mashed banana, 2 eggs (I only used one though) and cinnamon. It was interesting, tasted good, VERY moist. After the first one (it made 3 small cakes) I added 2Tbsp of flour and a pinch of soda to the rest of the batter and this made a nicer cake. More pleasing texture, no need for syrup, butter, etc. Finished the day's intake at 1075. A nice vegi-beef soup was 2 light meals, one before and one after water class. Today's weight rewarded me but I won't get too excited until it stays down for several days in a row.
