I slice my tomatoes about 1" thick and place on oiled sheet pans then drizzle with more olive oil and sprinkle with garlic powder and salt. Then roast in my convection oven at 400F for 60 mins - rotating pans at 30 mins... then run through my food mill that removes seeds and skin.
