Vegan/ aquafaba meringues 
Nicked from a recent article in the New Scientist.
i) Line a baking tray with grease proof paper
ii) Take the liquid from a 400g tin of chickpeas
iii) Add a tablespoon of lemon juice and whisk until very stiff
iv) One spoonful at a time, whisk in 125g of sugar
v) Place spoonfuls of meringue on a baking tray
vi) Bake at 110 degrees centigrade for 90 minutes
v) Turn the oven off, but leave the meringues in to cool
vi) Serve with coconut yoghurt and fruit
They sound fab 
happy experimenting!

Feel free to reply to any comment by clicking the "Reply" button.Here there are several friends who are vegetarian or vegan. One couple have been vegan most of their lives and she can literally make anything vegan. I learned about aquafaba and have a jar in the freezer. I should really use it more.

Lucky, always good to learn from others with more experience, I realise now this recipe has done the rounds before, but when I first saw it, last week, I was really excited and had to share
@girlwithsmiles I think there will still be those who are surprised at the versatility of many plant based foods. So it never hurts to repeat. I learned a new recipe.
I'll have to try that.
Funny. Aquafaba has become a commodity in our kitchen. When we make pressure cooker (Instant Pot) beans, the aquafaba gets saved in a bottle for later making rice or for anything else that benefits from fortifying -- bread or whatever. Ha, ha.

It would be 230 degrees Fahrenheit, hopefully yours has that type of dial instead for Gas it’s a quarter! I didn’t even know that was a setting either
