Looking in my pantry for something to eat for lunch. A box of stuffing sounded good. No, I'm in the mood for starch but something healthier. I have some quarter sized potatoes that are not long for this world. I figure I'll make those. I half them. I put olive oil in the pan and preheat it to medium high. I cut up some onion and garlic. I put all three in the pan and cook them until done. I then add some mushrooms, reduce heat and cook until soft.
