Just finished a very satisfying, quick meal; quickly prepared, that is. I'm not a foodie by any stretch of the imagination, but I like an easy-to-prepare, tasty meal as much as the next person.
I also love convenience. If you're a purist, and savor spending time over the stove/oven, the following is not for you. But, if you are like me, you may enjoy this "recipe."
I do most of my grocery shopping at Trader Joe's, have for years. They have some of the best semi-prepared (read microwaveable) meals around, perfect for individual preference enhancements.
So, here goes: being a native Southern Californian, I love Mexican food, could eat it numerous times/week. Trader Joe's carries an (imho) excellent chili relleno that takes about 7 minutes to fully cook. They also have rice in microwavable packets, they take 3-3.5 mins. The meal I fixed uses both those items.
First, I cooked the rice. Then, I put the relleno in. While the relleno was cooking, I cracked an egg into a frying pan, with a little butter, scrambled it a bit, then added the rice (about 1/2 the packet). Stirred that around a bit, then added about 2 tbsps ea. of salsa and some bruschetta. Next, I put in some chorizo (I love chorizo; this was vegan style), and mixed it all very thoroughly.
When the relleno was done, I put the contents of the frying pan onto my plate, then placed the relleno on top of it.
All in all, a very quick, satisfying, and (I thought) delicious meal. And it all only took about 10 minutes, and left me with minimal cleanup.
Give it a try, if you're so inclined.
Oh, and of course I topped it off with a very cold beer.
I wonder how healthy it would be. Maybe it is, maybe not. I hope you are well.
According to all the medical tests and screening I've had in the last year, I'm very healthy. And at 68, still mountainbiking. No chronic problems, pain free, and (in my own opinion, as well as doctors), a clear mind. So, you tell me; does that sound healthy enough?
@Condor5 It was not to offend you or anyone Condor, but there is so much unhealthy food on the market stuffed with salt and sugar (for instance), seemingly nice and tasteful, but that over time (sometimes over a long time, sometimes never), a lot of people get sick. Diabetics, obese, cancer, etc. that a little awareness is not too bad. If it fits someone, it helps maybe, if it doesn't fit, why bothering.
@Gert yes, and people need to be concerned about what goes into their bodies, you are absolutely right. No offense taken, I just wanted to make it clear that this was not a mandate on healthy living, merely an easy-to-fix, tasty meal, without a lot of cleanup. I expect everyone here is grownup enough to make their own choices about what is good for them and what is not, that's about it.

I had an easy meal too. I had a jerk chicken salad. I coated a boneless/skinless chicken with jerk sauce, put it in the toaster oven at 400 degrees for 10 minutes, turning once. I then prepared the salad portion. A common Dole garden salad, onions, celery and tomato. I cut the chicken breast into small chunks after cooling and added ranch dressing. It was quite tasty. It was accompanied by a near frozen glass of iced tea. If anyone tries this with another dressing, please post.
Recipe sounds good. BTW, you probably wouldn't want to be in a room with me ever.
