I am SO tickled right now!!!! I don't know how I didn't know this, BUT, you can freeze diced bell peppers, without blanching them first. You can also freeze caramelized onions and roasted garlic.
This makes my life SO much easier.

You can also freeze whole tomatoes. An heirloom variety called Stupice freezes well. Just wash, cut out the stem area and nip off the blossom end if it is large. Put them in quart freezer bags, suck out extra air. When needed run some warm water over the tomatoe, the skin just pops off and use to make soup, marinara sauce, thaw completely to use in any dish that calls for tomatoes.

I have frozen tomatoes whole. The peal will fall off when defrozen. It can be bitter. But the tomato is fine.

Every couple of years i process a few quince, and freeze in very small amounts, for use on my toast. Makes me very happy.
(Quince was THE fruit in the early 1800s.)
Yeah that is great I'm single and live alone so I have it found it helps to freeze a lot of things simply cuz I just can't eat that amount and I just put it away for later
