I was gonna make a beef and onion soup the other day and serve over potatoes and broccoli but the broccoli in the supermarket didn't look fresh so I made, I don't know what to call it lol

3 lbs bottom round roast
2 lbs sweet or spanish onions
1 head of garlic
Home made chicken broth
2 bags of frozen mixed veggies
Boiled potatoes
Leftover chicken

In a large pot, add a little bit of oil and preheat.. add the beef and brown very well... Add rough chopped onions and caramelize well... Add rough chopped garlic and saute a few minutes...
Add chicken broth and or water to fill pot halfway... Simmer for about an hour...
Add frozen veggies and more water or broth and simmer until tender... Add leftover chicken at to the end just to heat through...
Serve over potatoes...
Don't forget the black pepper!! 😊
Soup is easy to make...
