Winter Solstice represents letting go of the past and looking forward to the future. I like embracing the cycles of nature, the cycles of life this time of year. Yul celebrates with the tree, lights, gifts, and feasting. God Yul (yuletide blessings) everyone!!!

Level 8

Cooking big tomorrow, leftovers the rest of the time. Reading, a little woodwork, and a few movies streamed. 5 days of it! Perfection!!

I just started a brisket, should be ready tomorrow sometime, going to freeze most of it, watch a little football and play in the hot tub. Mostly hot tub.

Many years I'd done this. I tend to split it and make half as corned beef and the other half pastrami. The only difference is the pastrami is smoked.

@Larimar Last christmas I got myself an electric smoker, I've got it set low enough that it should be ready for lunch tomorrow. I injected it with beef broth and have a catch pan for the drippings. I was amazed at how little wood the electric one takes,I had bought 20 pounds of 2 different types, so my son will inherit it.

@glennlab My son is old school. But I LOVE smoked stuff. We did a turkey over apple wood that was to die for. You definitely don't want to waste that stuff.

@Larimar I ordered mine and thought I was getting the small smoker, I can do 6 turkeys at a time in mine. can, but the most I've done is 3. two for friends.

No celebrations going on here. A weeks worth of much needed vacation time and boycotting the stores and people until this crazy bullshit is over with and I do mean xmas shit.
