this is very simple but it works. i like sweet potatoes but i don't like them sweetened, as with marshmallows, for example. i prefer them mashed. i also never boil vegetables, not even potatoes. what i do is i just cut upa sweet potato and a regular potato (any kind i have on hand, more than one if they're small), unpeeled of course, into small pieces, and put them in a bowl with some butter (i sometimes use a butter spread instead) and some salt, and a drip of hazelnut syrup (maple works better but i have diabetes and my syrup is sugar-free) and microwave until soft enough to mash. then i form the mashed potato-sweet potato mixture into balls, spray with butter spray and bake at 400 or 450 until a little crusty on the outside. it's still nice and mushy on the inside! sometimes it spreads a bit and sometimes it retains its shape. i think the trick is not to have the mixture too wet. you can also fortify it with some bread crumbs.
