Nutty Oat Bars

Created by a nutritionist, these bars are delicious and healthy. A food processor makes short work of chopping nuts. I added a little butter since low fat bars are often too dry.

1 cup rolled oats
¾ cup whole wheat flour
2 tablespoons butter, chilled (optional)
1 teaspoon cinnamon
¼ teaspoon salt
½ cup pure maple syrup
1/3 cup unsweetened applesauce
¼ cup grapeseed, canola or safflower oil
1 large egg, lightly beaten
¾ cup chopped dried cranberries
½ cup finely chopped almonds
½ cup finely chopped pecans or walnuts
½ cup unsalted sunflower seeds
Cooking spray

  1. Preheat oven to 350 degrees F. Coat an 8-inch square pan with cooking spray.

  2. In a food processor, chop rolled oats until fine.

  3. In a medium bowl, whisk together the oats, flour, cinnamon and salt. Grate 2 tbs. butter into oat mixture. Cut in butter until the mixture resembles coarse cornmeal.

  4. In a large bowl, whisk together the maple syrup, applesauce, oil and egg until well combined.

  5. Stir in the oat mixture until combined. Stir in the dried cranberries, pecans, almonds and sunflower seeds.

  6. Spread the mixture into the prepared pan and bake until a toothpick inserted in the center comes out clean, about 30 minutes. Allow to cool completely, then cut into 12 bars, about 4 x 1-1/2 inches each.

Calories per bar with butter: 166; without butter: 150. Protein: 6 grams.

These bars are moist and delicious. Usually I refuse bars without chocolate.

Those look good. Will try them. And thanks for the calorie count! I am seriously tracking all my food now. So surprising what the calories are in so many common foods.

Cut 4-inch bars in half: 83 calories. That's what I did.
