Good for you. I have heard cider is the fastest growing beverage in the country.
I learned bud grafting from a local cider maker who would but rootstocks on sale and graft the varieties he wanted. He would graft 100's at a time. He got tired of cider and started a wine business but took on a partner who stayed in the cider business. The business is Tulip Valley Winery [tulipvalley.net] and the cider is called Buro-loco [cider.wsu.edu] One cider is fermented in used, smoked whiskey barrels. What an interesting flavor.
Wars have been started over what apple renders the best cider!
@texwood A true cider is a blend. Single apples don't make good ciders. Each apple has a distinctive trait and one needs to combine traits for a particular character. It is known that the English and French each have different styles of cider.
What variety?
Going into the cider making business or simply intending emulating Johnny Appleseed on your travels to become known as "Texanapplewood"?
EMLA-7...either the largest dwarf or smallest semi-dwarf, depending onwho's stalking. You know you can graft any apple tree wood to get that apple. As to which is best for cider, wars have started over such arguments! Smile. Tex
