I wanted to lose some weight and decided to try a plant based diet. I had tried Adkins and lasted about two days because I love pasta, rice, potatoes, and bread. I am amazed that I am losing a pound a week, eating foods I love, and I never feel deprived. I cannot understand how it works, but it does. In 15 weeks, I've lost 15 pounds, just using vegan substitutes for meat, butter, and cheese in my recipes. Thinking ahead to Thanksgiving, I found a recipe for vegan pumpkin pie, but I will have to make one for myself before I foist it off on my family. Has anyone tried one?

Good job. We went vegetarian about 20 years ago and both stopped worrying about our weights.
I especially am a big pasta, potatoes and rice person and home made beans. I don't know if it's the olive oil I use or what but weight has not been a problem since.
Since @Lorajay mentioned recipes, I'll dump in one of my favorites. Lol.
For those who don't mind not entirely vegan, mayonnaise works great too.
Honey Coleslaw
1/2 cup Vegenaise
1/3 cup Honey
2 tbsp White Vinegar
1/2 tsp Salt
1/2 tsp Mustard Powder
1/2 tsp Celery Seeds
1/4 tsp Ground Black Pepper
1 Head Cabbage, chopped
Mix all ingredients except cabbage in a bowl. Put chopped cabbage in a salad bowl and add sauce mixture to taste. Mix thoroughly and chill before serving.
