@Sheannutt Funny, the recipe called for "Vegetarian cheese". Maybe the people making the recipes don't know the difference.
There are a few companies that offer Vegan cheese. I think the most popular is made by Daiya. It really is good and tempting.
@Bob4Health I know Daiya and several other brands but have not seen Parmesan. Will look for it.
I’ve made spaghetti squash Alfredo, but it uses so much cream and cheese that it kind of defeats the purpose of trying to be slightly healthier by using spaghetti squash instead of noodles.

Looks fabulous!! I saved it to Pintrest. During the summer I don't turn on my oven, but it looks like a great fall/winter recipe.
