I watched the movie "The Game Changers" on Netflix today. I've been hearing a lot about it in a fitness group I'm in on Facebook and thought I'd check it out. It discusses the benefits of a plant-based diet: medically, physically, and enviromentally...I'm a bit fascinated and feel like I would like to move in that direction with my and my kiddo's food intake. What are some easy changes or basic recipes (kid friendly would be fabulous) to start with?

I love veggie chili. I make it hot but it's easy to make it mild. It's easy to freeze.

@Jenn_S I use sweet potato and/or butternut squash as a meat replacement in chili. Super yummy!

My favourite recipe:

Pecan nut roast

1 small onion
170g pecans
170g whole meal breadcrumbs
2 table spoons of parsley
140g tomato purée or paste
230g water
Salt and pepper to taste (I never add them)

i) grate onion
ii) chop nuts and parsley
iii) combine all ingredients in a large mixing bowl and mix until evenly distributed
iv) Transfer into a loaf tin and bake at 375f/ 190c/ GM5 for about 40 minutes.

Also good cold in sandwiches/ wraps with salad and sweet chilli sauce 😉

How big a change are we talking about?
It was easy for us since we'd gradually drifted off meat for a long time previously.
If they and you eat a lot of processed food, the first step is home cooking -- especially if you can get them to participate. 😎

Additional Edit: Also... One thing I've always been nervous about is nutrition -- especially for growing kids. Make sure to look around and make sure all your nutritional bases are covered.

I've heard that with all the vitamins we take, Americans have the most expensive urine in the world.
And I won't deny it. I take 7 pills a day because I don't trust myself to be able to avoid all unexpected deficiencies. Lol.😎

Coincidentally I played advocate yesterday for the 'Instant Pot'. We got a small (6 quart) one about a year ago and it makes a lot of veggie meals extremely simple.

For brown rice for example, just put in 1c of dried rice and 1 1/8c water or veggie stock. Put the lid on and press the pressure cook button (make sure the time is 20min). Then wait for it to release the pressure.

Red(kidney) beans are just as simple but 1/2c beans to 1 1/2c liquid and 35min --- no soaking. If you want maybe a splash of sweet vinegar at the end to make things digest better and to discourage gas.

The amounts can of course be scaled up or down as desired.
And it can also saute, slow cook, steam and other stuff. It's amazingly versatile.

I'd also look at spices. I love Adobo powder for beans & rice -- but not the salt bottles in the grocery store -- the real powder. And maybe a little olive oil.

@Jenn_S rice is easy... Most people say to use two cups water for every cup of rice... I don't.... Try it this way :
Put one cup of white rice in a frying pan... Heat on high and toast it a bit... Or not... Bring 1.5 cups of water to a boil... Add the boiling water... Simmer 15 minutes with the lid on... Let sit 10 minutes... Perfect rice... 😊

One easy thing is to simply prepare meals you normally do but leave out the meat (and add a few more seasonings). Stir frys are great and for starters there are lots of meat substitute items on the market. When I went vegetarian I took it slow and gradually reduced the meat. Kids might be another matter. In today's world many kids think food comes from the supermarket and get really upset when they learn how meat is raised and slaughtered. Kids need to learn about their food sources and often it is the kids that convert the parents. Good luck.

You can also make snack wraps with blanched broccoli, califlower, salsa, and guacamole ...
