Some great Vegan recipes for you, all tried and enjoyed:

Pecan Nut Roast
1 small onion
170g/ 6oz/ 1 cup pecans
170g/ 6oz/ 3 cups breadcrumbs
2 tbsp finely chopped parsley
140g/ 5oz tomato purée/ paste
230mls/ 8 oz/ 1 cup of water
Season to taste
i) Grate onions and chop nuts
ii) Combine all ingredients in a large bowl and mix well
iii) Transfer into a loaf tin and bake at 375ᵒf/ 190ᵒc GM5 for about 40 minutes
iv) Serve hot as roast, any leftovers good for wraps with salad

I usually just guesstimate the next one, but put approximate amounts in:

Cashew and Pepper Dip
Ingredients:
Cashews (-200g)
Grilled capsicum, half jar or a jar (reserve some juice)
Basil (couple of handfuls or to taste)
Method:
i) Toast cashew nuts
ii) Add some basil
iii) Add grilled capsicum and some juice from the jar
iv) Mix in food processor
v) Add more juice if required
vi) Serve with fresh bread or crackers

Pumpkin Soup with Basil
Ingredients:
500g/ 18oz pumpkin
700g/ 25oz carrots
6 cups of vegan chicken stock
I onion
250g/ 9oz really ripe tomatoes
Ground black pepper
2 tbsp chopped basil
Method:
Bring all to the boil and simmer until tender, blend and serve with bread.

Better than Baileys
Ingredients:
1 tin of coconut milk (mix well first)
2 tbsp brown
2 tbsp chocolate topping
2 tsp vanilla essence
¾ cup of whiskey
Method:
i) Combine all ingredients thoroughly using a whisk, do not froth
ii) Keep refrigerated, preferably in a dark bottle.

Anzac biscuits
Ingredients:
1 cup of rolled oats
1/2 cup
3/4 cup of flour
1 tbs golden syrup
1 tsp bicarb of soda
2 tbsp boiling water
1/2 cup of oil
Method:
i) Flour 2 oven trays, set oven at 160ᵒc
ii) Mix oats, & flour
iii) Mix syrup, soda & water
iv) Add oil and pour into dry mixture
v) Mix thoroughly
vi) Drop spoonfuls of the mixture onto the baking trays, leaving room to spread
vii) Bake for 18-20 minutes
viii) Cool on a cake cooler
This is a basic recipe which can be changed, e.g. I’ve used honey and Algarve nectar instead of syrup and margarine or ripe avocado instead of oil.

@girlwithsmiles Here's my favorite. This recipe contains eggs, but you can substitute a flax or chia egg

HEALTHY BANANA OATMEAL MUFFINS (MAKES 12)

Preheat oven to 375

In a large bowl mix
3 cups organic old fashioned rolled oats
1/4 cup brown sugar or more to taste (I use 1/3 cup)
1/2 tsp salt
2 tsp baking powder
1/2 tsp. cinnamon

In another small bowl, whisk together
2 eggs
1 very ripe large banana
1 tsp vanilla extract
1 cup organic applesauce
1 cup almond milk

Pour wet ingredients into dry ingredients and mix well.

Grease a muffin tin and use about 1/3 cup of batter for each muffin.

If desired, before baking you can add extras like cranberries, raisins, mini chocolate chips, shredded coconut or chopped nuts to the batter or sprinkle on top before baking.. I usually add chopped walnuts to the batter and sprinkled shredded coconut on top.

Bake at 375 for about 30-32 min
