Looks complicated. This is the Jar I've always used. I make a head and a half and use a table spoon and a half of regular salt. Cut the cabbage thin. Scrunch it for 5 minutes to make the juice. Put it all in the jar. I usually peel off a couple of leaves to put on top to take any kind of mold that may develop. The ceramic weights go on top, then wait 7 day and voile, it's sauerkraut.

When I was 3.5 I was riding in the back seat of my baby sitters car, )1947 Grey Plymouth) the door handles were different then small, thin, chrome and pushed down to open. There was no "car seat" seat belts or any of those things. So, I'm standing in the back seat and looking out the window that is half rolled down. Suddenly the car takes a left turn, I lurch forward and push the handle down, the door flies open and I go sailing into some guys yard. Luckily no curb, no side walks just rocks and grass, I finally roll to a stop not far from an old wooden porch. The sitter noticed the back door swinging open and stopped the car and came back to find me. They said I was laughing hysterically, it was the funnest thing! Hek, I was 3 and a half how would I know the difference?

After the war, I wound up back in Memphis for a few years, it wasn't all bad. I lived in an apartment building behind Overton Square. The "happening " Place in the late 70s.
