you understand that if you fill a clay pot that previously contained wine that the water will extract enough taste out of the porous pot to make it taste similar to wine. (then blend that water with the original wine and you double the amount). Then have drunk people taste and see this and you get a legend with a miracle.

you must be in a location where sanitary water is in good supply, but it is not universal.

You do know that people upriver toss some of their human waste into the water, right? Living downstream was not necessarily a good thing. They did not know about boiling water, but the process of fermentation provided a healthy water source. The wine then was not as strong as the wine of today. The French learned this and still practice it today -- doesn't mean they are alcoholics.
