Going to be a busy cooking day tomorrow. My friend Roberta's birthday is next week and I'm having her birthday luncheon tomorrow.
On the menu is Buttermilk Chicken with mashed potatoes (with the buttermilk chicken gravy to top), green beans and for dessert is German's Chocolate Cake with Vanilla Bean Ice Cream. This is the best frosting ever!
Almond/Pecan/Coconut Frosting
1 can Sweetened Condensed Milk
1/2 cup butter
1/4 cup dark brown sugar
2 egg yolks
1.5 cups flaked sweetened Coconut
1.25 cup nuts (3/4 cup pecans/1/2 cup almond slivers)
1 tsp Vanilla
1/4 tsp Almond Extract
Heat butter, milk, sugar, yolks on med low heat until just bubbly and thickened, stirring constantly. Remove from heat, add nuts and flavors, stir until combined, let cool to "slightly warm" to spread on cooled cake.
Why are you doing this to me? I'm hungry. But I'm too lazy to feed myself unless I'm getting weak. I swear I can smell it from here.
