I bought a whole bunch of veggies last week... They were all on sale for 99 cents per pound or less... The carrots were 79 cents.. So I decided to make veggie soup / stew...

Green peppers, sweet onions, carrots, celery.. Goes in the pot with one tablespoon of corn oil... It starts to saute but then converts to a bit of steaming from the moisture from the veggies... I kept on sauteing until the liquid evaporated and the veggies caramelized... Added some water and simmered for about 30 minutes... Added potatoes and tomatoes, and simmered for another 20 minutes... Then added diced eggplant and about 5 cloves of garlic... With some Goya adobo, black pepper and Italian seasoning blend... During the last five minutes, I added a couple spoons of instant mashed potatoes to thicken the broth instead of flour or connstarch.... It turned out great but was even better the next day!

Looks yummy. And to think I made pancakes last night for dinner. LOL. But hey, they were blueberry/mango/strawberry(which I'm allergic to but shhhhhh) pancakes!!! Sadly everything is expensive at the grocery stores here due to rural location and selection is lacking. I love eggplant but the store only gets it very rarely and all would be gone in minutes. Seriously, I pay $7 for a bunch of celery and $8 for a head of cauliflower. We do get veggies from the local Hutterite colony and friends with gardens sometimes and those are delicious. I like to make veggie soup when the weather gets cooler (and veggie chili and gumbo).

7 dollars for celery?! That's crazy! You should grow your own...

@Cutiebeauty I don't have time to tend to a garden. I run my business and work everyday (including doing the books, taxes, advertising, marketing, customer service). Plus I have my own 50 something pets and almost 20 acres of property to tend to. The growing season here is may be 2-3 months at best (winter can be from October to May). And being out in the rural boonies, there are way more mosquitoes and other biting insects during the warmer months, and I'm severely allergic to them so I can't be outside much (plus I'm extremely sensitive to heat). When I lived in the city I had flower and perennial gardens I enjoyed tending to and no veggie garden because groceries were much cheaper (a lot of stores within walking distance and competitive prices). The closest town from me now has only one grocery store. You can go to the city for cheaper groceries but you have to pay for fuel to get there (no public transportation either).

In full bachelor mode.. there have been times recently when, upon eating something home cooked like that ..I’d nearly melt. Not that I couldn’t, or shouldn’t get more creative in the kitchen, but feeling, ‘it’s just me,’ I make zero effort..

Good idea. Think I'll drag out the crock pot and whatever we have in the fridge. I'm chicken about spices. However, oregano and marjoram are high in antioxidants.

Spices are important in making a tasty and healthy meal... Start small...

Always put chopped celery, chopped green bell peppers, and diced onions in everything you cook! The celery is rich in Vitamin D, which acts as a stimulant on the salivary glands ( making the dish literally mouth-watering). And ALWAYS eat the heart of the green bell pepper,out of respect for the pepper allowing you to 'sacrifice' it into your cooking pot!

I already do that as much as possible.. 😊

Oh, very good. I made a big pot of veggies,too. I went a little exotic by adding my homemade ginger-garlic puree and cumin, garam masala and a small can of stewed tomatoes. Ate some for dinner, had some for breakfast the next day .Now there is one more serving left.I think I'll enhance it with a poached egg on top.I love your idea of adding some mashed potatoes.

I was thinking about adding cumin and chilli powder but cumin is such a strong spice that I thought it would overwhelm the flavor of the veggies... The instant mashed potatoes was something I've thought about before... First time doing it and it worked out very well...

Looks really good. Soup, stews, and chili are always better the second day. I'm hoping for some cooler weather here so I can get back to making soups and such.

Pasta sauce is also better the next day...
