Broiled Plum Tomatoes with Parmesan Cheese

When plum tomatoes are uninspiring or overripe, I broil them topped with grated Parmigiano Reggiano cheese. Add a sprinkle of salt and pepper.

Spray the pan lightly with cooking spray first.

To save energy, I use the toaster oven. Easy and delicious!

I use my plum and Roma tomatoes to make and can tomato sauce. It beats any store bought tomato sauce hands down.

The thought of eating just tomatoes is not something I would like, but put them with a lot of other stuff and we have a good meal. Thanks for the pictures.

I do this. I also sprinkle on a little dried basil or oregano.
