@Donna_I They are best pan fried in butter with a little salt and pepper, some onions, a few celery leaves and a little garlic. It is best to squeeze out the casings first before cooking.

I love veal but haven't eaten it in 45 years for that reason .
Veal is not ripped from its mother's womb, it is raised and fatten for 3 to 6 months. There are many types of veal; milk fed veal which maybe left with the cow until slaughter, grain feed veal that is finished on grain and white veal that is feed totally inside devoid of sunlight(I find this practise sick as well).
