I was actually digging out my sweet potatoes today. I had the same situation, on was sprouting and I planted just to see what would come out.
I dug out 4 sweet potatoes, not as big as yours, but we can cook them all together and have as a side dish on day.
Thanks for the idea to plant them inside a tire
