Homegrown sugar free pickled beets with pearl onions. I love these but store bought are loaded with sugar and blow my low carb diet. Now need to freeze a huge bag of greens.

Those look great. I love pickled beets but not with any sweetener added.

I don't know why sugar is added to pickles. I once read the ingredients for Claussen Pickels and saw high fructose corn syrup. This is craze. Maybe it's a good thing in that it forces some of us to learn about fermenting and pickling.

@CrazyQuilter My late partner from Iran didn't care for sweet. She preferred sour and the more tart the better. This is a western addiction. I do a lot of canning especially fruits and preserves. I have more jars than I can possibly use but hat to se fruit go to waste. There is a pectin Pamona's that is a low sugar pectin that I use. I learned how to ferment, sauerkraut, Kimchi etc. Unfortunately, with me the only one eating it it goes bad before I can finish. I have yet to try pickling.

@CrazyQuilter I do the same. Before I met my late partner I was canning so it was my thing not hers. I give a lot of canned goods away but seldom get the jars back. We have a take-it-or-leave-it here and one can find anything. My microwave and toaster oven came from there. [lopezsolidwaste.org]

My whole family (including the 9yo son) loves beets, but like you said, store bought is crazy loaded with sugar. So unnecessary
