Made pasta with eggplant and zucchini. To fry the eggplant it needs to be dredged in something eggish and then flower, I needed an egg substitute. I’ve had marginal results with both aquafaba and flax seed so I tried mixing them both together, I think I’m on to something.

i started roasting thick slices of eggplant with a little olive oil, salt, pepper, & garlic when i started having issues with some dietary restrictions. (like fried food. stupid pancreas.) yours looks good.

While frying it I was considering baking it next time, perhaps with a bit of vegan mozzarella on top.

Ahh, the eggplant days... 
I actually understand. When I cook certain dishes I’m transported back to my grandmothers house in Brooklyn.
@ArdentAtheist My late partner was Iranian and eggplant is a staple of their diet. Be sure to slice it and salt the slices for a while then rinse off the salt. This gets rid of any bitterness.
