OK mushrooms... Everytime I use them they end up rubbery... Any suggestions to cook them properly so they are tender?

Yes. If they are rubbery you are likely steaming them instead of searing them.

Crowding a pan is typically why this happens.

Salting too soon will draw water out.
Too much in the pan.

Put them in first seat them and set them off to the side is one thing you can do.

I can help more if you give me an idea of what you use them for. Do you have a dish in mind or have you made something recently?

Water is the enemy with mushrooms.

What sort of Mushrooms are you using, some types are naturally rubbery or chewy.
Using White Button Mushrooms or Portabellas should solve your problem.

Well, the type of mushrooms I get here usually I fry them, in olive oil or butter and put loads of pepper and lemon juice. It's a suggestion...
