Iām on vacation, oldest friend visiting from NY... we whipped this up... he did he veggies and yuca, I did the tofu scramble, lots of coffee, dam good! The garlic sauce on the yuca and habanero hot sauce are amazing... next stop the Pub for a few Guinness. Jim is a NY Fire chief and not vegan but good food is good food. Even though he is not vegan he totally gets it, cheers

I'm beginning to be concerned about your Guiness habit, and where I can get one around here. ?
One of the things I love most about being vegan is how easy it is to "throw" a meal together. I don't have to worry much about what goes together. Just add more veggies if I'm hungrier than I thought. Mix and match with no worries. I can grab whatever is in my fridge and dinner is easy, one dish meal.
