I bought a sample back of EXO Protein bars (EXO as in cricket exoskeleton flour) just to see what they're like. They weren't bad at all. I don't buy protein bars in general, so it's not really my thing for that reason.
I lived in Zambia for a few years and managed to eat caterpillars, termites, and grasshoppers prepared all sorts of ways. I've thought heavily about incorporating insect flour into my cooking. I have a buddy in the Army who uses that for all his baking as it's a great source of protein.
I used to eat ants as a kid and have always thought we should be eating more insects. Sadly, that switch probably won't be made until there is absolutely no other choice.
