In 2016, cancer issues began limiting food I can digest, until I felt constantly famished, longing even for junk food I'd shunned since the 1970s.
Even while still living and teaching in Songkhla, Thailand, I gave up raw fruit and vegetables, most meat, (except for a certain brand of canned Thai spicy mackerel), coconut milk, monthong durian..all favorite foods.
Still, I like to think about all the Thai food I used to eat, now seeming like "food porn."
Every morning I walked to a sidewalk vendor several blocks away and bought rolls of sticky rice with mashed berry and banana cores, wrapped in banana leaves and slow roasted underground in sand pits.
YUM!!!!
Also, monthong durian, ice cold coconut milk, steamed shrimp, and dozens of exotic fruits most people have never heard of.

We have a Thai restaurant near by, One day during while ordering food to go, I was talking with several people and someone asked how the food was. I said that I did not like places like this as the food is so good that I have a problem not going crazy ordering all kinds of things that will be great. I have eaten in several Thai restaurants and have found that even the worst are great and the better ones are just fantastic. I still have a problem while ordering to take home as for two people I have to order at least five or six dishes. Of course there is enough food for a couple of meals which are all great.
I have no idea what this dish shown is, but I can be assured that they are great.
