Just because there's an animal reservoir doesn't mean you can't eliminate the human disease. Often the human variant depends on having acquired mutations that allows it to spread between humans, and those mutations aren't successful in the animal reservoir. Also, relatively few people are exposed to bats or pangolins, or whatever the reservoir is, so if just those few are protected, then the disease won't exist among humans.
