Someone asked me to post these pics so I'm going to do so here. Had some help with last night's dinner: Shepherd's Pie and French Silk Chocolate Pie with pecan crust. I was never so glad to have a second mixer when my primary one broke down halfway through.

The Shepherd's Pie is supposed to get better the more times you heat it up as the flavor of the creamed corn works its way through the other ingredients. It is vety bland if you don't get the seasoning right, and I didn't.

The chocolate pie was a lot of work but it was good enough to sell were I so inclined. First attempt at a pecan pie shell and it came out nicely. I made a couple extra pies for neighbors.

I used to cook and bake a lot, but now I prefer the flavor of authentic ethnic food. Please let me know if you have a not so difficult recipe that you'd like me to try. Thanks! Wish you were here!

Living alone for 30 years has made me very lazy. I usually just eat over the sink so I don't have to do so many dishes and I don't make a mess.

I can totally relate, thank you. It is tough to find any satisfaction in cooking for one. Right now I have a housekeeper who has started helping with cooking too, although she can't really cook so I end up doing most of the work anyway but it still helps me somewhat.

I really like trying new restaurants but I haven't been to a restaurant in two years due to COVID. The Colorado government is ending mandates tomorrow so I guess they think it's safe to get back to normal. I am skeptical.

@LovinLarge I can't afford to eat out, at least I can't justify the expense. A housekeeper would be awesome tho. That's why I try to never make a mess.

@barjoe I'm going to try one of those pre-made meal services as soon as I decide which one looks most promising. You know, under $10 for a meal without dessert, not big but good quality not like a tv dinner. I'll let you know if I find a decent one.

Those look delicious! I'm on a calorie-restricted diet, so limit my culinary experiments to vegetarian soups and salads (dressing as extravagant as I want). I'd love a piece of that pie. If you'd like a good soup recipe, or have one to trade, I'm in.

Very impressive. I don't usually use a recipe for soup. My favorite soup is French Onion but I didn't like the last recipe I used. I would love it if you had a favorite soup recipe that you'd like to share.

@LovinLarge I have my own recipe for cauliflower/carrot soup. I don't measure much, so amounts are approximate.

Sauté 1 med. yellow onion, chopped, in 1 T. olive oil + 1 T. butter in large pot until transparent. Pour 1.5 quarts of broth ( either vegetable or chicken) in the pot. Add 1 large head of cauliflower or 2 small heads, broken up into smaller pieces. Add 3/4 lb. of chopped carrots, and some grated ginger (optional. I used about 1-2 T.). Bring to boil and simmer for about 40 minutes, until vegetables are tender. Remove from stove and purée with a submersible blender until creamy and smooth. Top with sautéed crispy shallots. You can adjust this to your liking. I don't add salt because the broth has sodium. You can add white pepper, if desired.

@Organist1 That does sound very good, I'll try that for sure, thank you. I'm going to start trying these new cauliflower things that they're coming out with now, like the pizza crusts. I hear they are pretty good!

@LovinLarge Cauliflower is a pretty good substitute for some things. I use cauliflower rice instead of regular rice in poke bowls.
