Pheromones often have a good deal of influence, but not across a crowded bar. This is an interesting question... I read a New York Times article one time which had a subtitle to the effect that you can make yourself fall in love and out of love in the same way - attraction, I believe, is the same sort of thing. Can't link to the article because I've reached my NYT max for the month.
