So far.... Cat Grass, Thyme, Kale & Red Beets have sprouted.
Thyme should be fun to cook with.
Cat Grass I'll leave to "The Boys" to evaluate.
Red Beets; I hate beets.
Kale; What does one do with Kale?

The beets and Kale will have to be "thinned" or they will all be competing with each-other for space. Search Beet-salad stack (see image) for a great recipe for beets; but to get to this stage they need to be cooked first - boiled a awhile....then soaked in sugar.
Kale is boring...but a decent "green" for stir frying. it's a rough-textured leaf that's better cooked. You'll see them compete for space...take out the slower/smaller ones or they'll all be small.
Thyme? meh...My two herbs worth growing are, IMO, Oregano and Basil.
Keep pruning the lower beet leaves and use as greens. Cook like spinach, or add to salad once they get big enough. But i would let them get to about 6 or 8 inches the cut the top off and they will give lots of greens but the root bulb may stay small with lots of pruning. Give it a try.
