Anybody else started canning yet? I have switched to freezing more of my produce instead of canning it, a lot less labour intensive and it lasts the winter through. The surprise for me was freezing cherry tomatoes as they always produce more than can be used up in salads but they are great in soups and stews or casseroles, right out of the freezer.
Stem them and wash them, shake dry and then freeze in the freezer on a backing sheet, once frozen just pop them in a freeze bag and use when needed over the next 6 months.

A little bit of different things. 2 dozen half pints of plum jam + blanching and freezing lots of bell peppers. Also have frozen and dried both plums and peppers. The apple and pear season has just started here, groan. I already have way too much for one person but hate to see food go to waste.

I have been freezing for a few years, never got into canning. This year I have made several batches of roasted tomato soup, and that is frozen in individual serving jars for future lunches. I have several other variety of soups as well. I also have some tomato sauce that will be frozen soon. I am making plans to stock up, fill up my freezer and pantry in case this winter goes to hell with Covid or other. My kitchen freezer is almost full, as is the freezer in the garage. I have one more trip to Costco planned and the pantry will be stuffed.

I quit canning and started freezing years ago.
