I put chocolate in mine!
I put raisins and walnuts in the ones today
OMG I'm jealous and now I'm hankering for some zucchini bread with butter, warm from the oven. And yes, chocolate would work well.
Head south....
Love Earth Balance! They make a great spreadable and baking "butter"
What does it contain?
@FrayedBear ( yellow tub in the photo) I get the soy free version.
@Donna_I You mean it doesn't come from milk! Quick read this short history then go and look at the photos of the stuff without its nice yellow dye.

Soon, very soon, well a month or more anyway, I too shall have these!
Looks delicious! Recipe?
1 3/4 cups all-purpose flour or whole wheat pastry flour
1 teaspoon cinnamon (or nutmeg or all spice or even pumpkin pie spice)
3/4 teaspoon salt
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup organic raw
---mix dry ingredients in bowl
then add:
one ripe banana blended into a "paste"
1/3 cup melted coconut oil
1/4 cup coconut mylk coffee creamer vanilla flavored (or vanilla almond mylk or any plant-based vanilla mylk)
1 teaspoon vanilla extract
mix by hand until pretty evenly distributed....but will start to get dry so add in 1 1/4 Cup grated fresh zucchini
and then throw in a handful of -- raisins, dried cranberries, dried blueberries, or dried cherries
and then throw in a handful of your favorite tree nut
into loaf pan and bake about 55 mins at 350 F or until a butter knife pulls out clean
adjust baking time down for cake pans where the batter is spread more thinly or muffins
@SkotlandSkye Thank you SO MUCH for sharing this!
@JBeberstein You bet It's a great recipe. I use pretty much the same recipe for carrot cake!
